    Adjust rack to top position and preheat oven to 450 degrees. Bring a large pot of salted water to a boil. Wash and dry produce. Drain and rinse cannellini beans . Peel and mince or grate garlic . Zest and quarter lemon .

    Once water is boiling, add penne pasta and cook, stirring occasionally, until al dente, ⏱️ 9-11 minutes . Reserve 1 1/2 cups pasta cooking water (1 1/2 cups for 4 servings), then drain.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the beans and cook, stirring, until warmed through, ⏱️ 1-2 minutes . Add spinach and another drizzle of oil; cook, stirring, until wilted, ⏱️ 2-4 minutes . Add the garlic; cook until fragrant, ⏱️ 30 seconds . Season with salt and black pepper .

    Reduce heat to medium low; stir in cheese roux concentrate , sour cream , half the Italian seasoning , 1/2 cup reserved pasta cooking water, butter , and juice from two lemon wedges. Cook, stirring occasionally, until bubbling, ⏱️ 1-2 minutes . Remove from heat.

    Stire the drained penne into the pan until thoroughly coated. Transfer baking dish topped with Italian cheese blend . Bake on top rack until cheese is bubbling, ⏱️ 2-4 minutes .
